White Bean Dip Recipe
* 1 can (16 oz size) cannellini beans
* 3/4 cup cooked white beans
* 1 lemon, finely grated rind of
* 2 tablespoons fresh lemon juice
* 1 tablespoon extra-virgin olive oil
* 2 cloves garlic -- minced
* 1/4 teaspoon fine sea salt
* freshly ground black pepper
* 2 tablespoons water
* 1/4 cup minced fresh herbs (parsley, basil, oregano)
Directions:
1. Drain and rinse beans in cool water.
2. Combine all ingredients except water and herbs in
a blender or food processor until smooth.
3. With motor running, gradually add water until a
smooth, light consistency is reached.
4. Stir in the herbs right before serving.
Makes: 8 servings
